Blueberry Muffin Smoothie

Coming into this time of year I like to fit some Smoothies into my breakfast routines, especially as we get closer to the summer months and there is an abundance of fresh berries on offer.  This Blueberry Muffin Smoothie incorporates all things that are healthy for breakfast but with the tasty of a naughty Blueberry Muffin, the porridge oats in it make it quite filling, so will keep you going until lunchtime.

Blueberry Muffin Smoothie

Ingredients (Serves 2)

70g Porridge Oats
160ml Semi Skimmed Milk
270ml Low Fat Natural Yogurt
230g Blueberries (Fresh or Frozen)
1 tbsp. Honey
1/4 tsp. Vanilla Extract
1/2 tsp. Cinnamon

Method

  • In a blender add the Porridge Oats and whizz up until finely ground
  • Next add in the Milk and Yogurt and give another quick blast
  • Finally, add the Blueberries, Honey, Vanilla and Cinnamon, whizz again until all ingredients are well incorporated
  • Serve in a glass and enjoy right away (If you leave it to long the porridge oats soak up all the liquid and you will need to eat it with a spoon!)
