Goats Cheese & Vegetable Pasta

It’s not unusual for us to get to the stage in the week where we have nothing planned for dinner, and can’t be bothered to go to the shops to get anything.  This recipe evolved on one such occasion and has now become a dish we regularly plan for.  Its quick, easy and can be adapted to suit whatever vegetables you have left in your fridge!

Goats Cheese and Vegetable Pasta

Ingredients (Serves 2)

120g Pasta Shapes
75g Goats Cheese
1 Onion, chopped
3 Garlic cloves (or 1.5 tsp. lazy garlic)
150g Mushrooms, sliced
1 Red Pepper, sliced
175g Broccoli, cut into small pieces
1 tbsp. Olive Oil

Method

  • In a pan heat up the Olive Oil, add the chopped Onions and Garlic and cook for a few minutes, then add the Red Pepper and Mushrooms
  • Cook until softened (but not mush!)
  • Cook the pasta as per the instructions on the side of the packet, about 3 minutes before the end of the cooking time drop in the broccoli florets
  • Once the pasta and broccoli is ready drain
  • Add the other vegetables to the pot along with the Goats Cheese, stir until all the cheese is melted and mixed well through
  • You are now ready to serve! Enjoy with a side of salad and some garlic bread
