Recently while on holiday on the Isle of Lewis, Stuart and I came across the Hebridean Hand Dived Scallops, based in a shell covered shed on the end of a pier in Miavaig near Uig. Not ones to pass up the opportunity to have some local fresh delicacies we stopped in and came face to face with 2 large net bags filled with live snapping scallops – so as fresh as you can get! Plus there was a really cute puppy!
The scallops come in small, medium, large and extra large, we went for 6 medium scallops which were massive, but apparently about half the size of the extra large ones! You can buy them live, and prepare them yourself or as we did have the lady prepare them for us! Since they were so fresh we took the opportunity to try a Ceviche recipe we seen at Eat Drink Discover Scotland by Chef Jacqueline O’Donnell, where she simply poured some good Gin over the finely sliced scallops to cure them. We used The Botanist Gin from Islay, which is one of our favourite gins (and also conveniently we had a bottle with us!). Such an easy and tasty dish, with the scallops taking on some of the delicious flavours from the Gin.
