On these cold winters days there is nothing nicer than a big bowl of warming soup. This recipe is super quick, easy to make and perfect for a working from home lunch, or any other quick meal. It is also a good way to use up that never-ending bag of peas stuck at the back of the freezer!
Pea & Mint Soup
Ingredients (Makes 2 generous bowls)
400g Peas (fresh or frozen)
500ml Stock (vegetable or chicken)
1 Onion
1 Clove of Garlic
80ml Double Cream
Small handful of Mint Leaves
Salt and Pepper
Olive Oil
Method

In a saucepan pour in a little olive oil, heat up and add in the onions and garlic, cook until soft

Add the peas and stock and bring to the boil

Simmer for about 10 – 15 mins or until peas are cooked

Remove heat and add in the cream and mint and stir

Blend either using a food processor or hand blender

Pour into bowls, top with a drizzle of cream and serve with tasty crusty bread
