Mini Crepe Cake

Happy Pancake Day! I do love pancakes; they are a kind of staple in our house. From American Fluffy ones for a weekend lazy brunch or a French crepe for a evening meal stuffed with something tasty, or even just with a squeeze of lemon. For this pancake day though I decided to do something different and take my love of crepes and Nutella and make a Nutella Crepe Cake!

It is easy to make, well the time consuming bit being making the 20 odd pancakes you need to make it! But other than that its simple! The recipe below makes about 6 crepes, so you would need to double or triple the ingredients depending on how high you want your stack!

Crepes (From Nigellas Feast )

Ingredients

30 grams unsalted butter melted (plus more for frying)
150 grams plain flour
325 ml milk
1 large egg

Method

  • In a mixing bowl sift the flour and add the eggs and milk and whisk into a batter with a consistency of a thin cream
  • Melt the butter and add to the batter just before making the crepes, mix well
  • Heat a little butter in a pan (even better if you have a special crepe pan!) then add about a small ladle full of the batter into the pan
  • Quickly swirl the batter round the pan so a thin crepe is formed and once golden flip the crepe and repeat on the other side
  • Once cooked layer up the crepes to cool in a stack separated by baking parchment.
  • Once the crepes are all cool, put the first crepe on a plate and spread a thin layer of Nutella on top. **Top Tip** heat the nutella in the microwave for 15 secs it makes it easier to spread on (or paint on if you use a brush)
  • Top with another crepe, and spread a thin layer of nutella on top, and repeat this until all the crepes are used
  • Finish the ‘cake’ with a generous spread of nutella and sprinkle with some crushed hazelnuts

  1. This looks so good! Your crepes look fantastic – all the same size. Mine are always a bit “raggy doll” – all different shapes & sizes!
