Chocolate Chip Shortbread

Chocolate Chips

I do like to have a biscuit with my morning cuppa, but quite often it just tends to be something plain, like a Digestive or a Rich Tea.  I decided this week I needed something different, and so threw together this batch of Chocolate Chip Shortbread.

Chocolate Chip Shortbread (Makes approx. 16 pieces)


250g Unsalted Butter, softened
50g Caster Sugar
250g Plain Flour
125g Cornflour
100g Chocolate Chips (I used a mix of white and milk chocolate)
50g White Chocolate
50g Milk Chocolate
Vanilla Essence


  • Beat together the butter and sugar until creamy and light
  • Sift in the flour and cornflour and start to fold it into a dough
  • Add a few drops of Vanilla Essence and mix well.  Fold in the chocolate chips until evenly distributed
  • Lay a piece of cling film on the work top and put the dough mixture on top, then use the cling film to roll it into a sausage shape about 5cm in diameter.

Dough Sausage

  • Put the dough into the fridge for about 1 hour to allow it to firm up
  • After 1 hour preheat the oven to 170C/150C Fan/Gas Mark 3 and line 2 baking trays.
  • Take the dough out of the fridge and slice into 1 cm think rounds and place on your baking trays

Sliced up and ready for the oven

  • Place in oven and bake for around 30-35 mins.
  • Remove from the oven and allow to cool on a wire rack
  • Once cool, melt the white and milk chocolate separately, and using a spoon ‘flick’ the melted chocolate over the shortbread pieces.  I did the milk chocolate first and then the white.

Baked, covered in chocolate and ready to eat!
