This evening has been quite ‘balmy’ or at least it has been in my household. Maybe its just down to the volume of this tasty, zesty and a little boozy sorbet we have been eating to try and cool down! By coincidence its National Tequila Day! So to keep cool or celebrate, try this easy sorbet.
Tequila and Lime Sorbet (approx. 4 portions)
Ingredients
250 ml water
200 g sugar
grated zest and juice of 6 limes
100 ml tequila
Method

Heat the water and sugar together until the sugar dissolves, stirring regularly

Once dissolved remove from heat and add the zest and juice of the limes.

Mix well and leave in the bowl covered for about one hour or until cooled

Once cool pour into a freezeable tub and mix in the tequila.

Put the tub in the freezer, returning about once a hour to ‘scrape’ the sorbet and break up the crystals.

Continue doing this until completely frozen. Keep in the freezer until needed
This is a tasty dessert with a nice kick of tequila! It starts to melt quite quick, so make sure you chill your bowls before serving – alternatively it can become a frozen margarita!
