My love for Gochujang is undying! Sometimes, you just need a tasty pasta sauce to turn to when cooking feels like too much effort. This sauce is incredibly easy to make, delightfully tasty and has a little spicy kick. The Gochujang adds a lovely peppery spice, while the vodka enhances the flavour. I usually batch cook this and freeze for future use, in either freezer bags or tubs, for those lazy moments. It’s easy to defrost by either leaving out a few hours before needed or a quick blast in the microwave.
Ingredients
800g finely chopped tomatoes (tinned will do!)
100g Gochujang
80g single cream
35ml Vodka
4 cloves garlic
1 large onion
1 tbsp olive oil
1.5 tbsp butter
Method
- Melt butter and olive oil together in a pan.
- Add the finely chopped onion and garlic and cook until softened.
- Pour in the chopped tomatoes and simmer for around 20-30 minutes until the sauce thickens.
- Remove from the heat and allow to cool slightly, then blend either with a stick blender or in a food processor.
- Stir in the single cream until well combined.
- Finally add the vodka and mix thoroughly.
- Cool the sauce in the fridge.
