Grilled Peaches with Burrata

We have had such lovely weather here in the UK over the last few weeks, it is probably our summer to be honest, we are never that lucky to have such sunshine for the whole summer! The BBQ has been out quite a few times now, taking advantage of the warmth well into the evening. It is so easy to make a BBQ all about the meat, but in an attempt to be healthier and different, I decided to grill some peaches and serve with a creamy Burrata.

Peaches remind me of Italy, fresh peaches with parma ham and a nice cold glass of white wine makes a perfect al fresco lunch, or as a fresher dish for the BBQ. But pairing Peaches with the Burrata cuts through the creaminess of the cheese, and served on crusty toasted bread with a drizzle of honey makes a great sharing plate, of course washed down with some wine!

This recipe is quick and easy to make and definitely quick and easy to eat! You want to choose peaches that are firm, but not hard, and equally not too soft as this will make them difficult to cut. The burrata is best bought from an Italian deli to ensure you get the proper creamy, soft, oozy delicious cheese. However, Tesco and M&S do pretty decent burratas if there are no Italian deli’s nearby.

Grilled Peaches and Burrata (Serves 4)

Ingredients

1 Loaf Crusty Bread
4 Ripe Peaches, halved and pitted
Honey
Ball of Burrata
Fresh Mint
Butter, melted
Sea Salt

Method

  • Fire up the BBQ! This will obviously take some time, so get it started while you prep everything for this dish. Alternatively this could be made in a griddle pan on the hob.
  • Firstly slice the bread into 2cm thick slices, brush with the melted butter.
  • Take the peaches and cut in half and remove the stone, then brush with the melted butter.
  • Once your BBQ or griddle pan is nice an hot, take the bread and toast on each side until clear grill marks appear, this should be around 2 mins each side.
  • Remove from heat, sprinkle with sea salt, and then split the bread in half, you want to make this into crostini sized bites.
  • Next, place the peaches on the BBQ or griddle pan, placing flesh down and cooking until they start to caramelise and the grill marks appear. Depending on the heat, this may take around 2-3 mins.
  • Remove from the heat and allow to cool, then slice into 2 or 3 pieces.
  • Once ready to serve, place your burrata in the centre of your board or plate and arrange the bread and peaches around it – maybe with more flair than I have!
  • To finish drizzle some honey over the top and sprinkle some fresh mint.

And enjoy, in the garden with a chilled bottle of white or rose wine and some friends, or actually I won’t judge if you devour this yourself!
