Citrus Salsa Chicken

I have to admit I am not really sure where this recipe originally came from, but its one that we cook quite regularly due to its great flavours and how easy it is to make.  We make up the marinade before work and leave the chicken in it in the fridge, then all you need to do is pop it in the oven when you get home.

Citrus Salsa Chicken (Serves 2)


2 Chicken Breasts
250ml Passata
200ml Orange Juice
2 cloves of Garlic
1 tsp. Oregano
1 tsp. Hot Pepper Sauce
Chunky Salsa
Zest and juice of a Lemon
Zest and juice of a Lime


  • The best way to marinade is to pop everything in a zip lock bag.
  • Grate the zest of the lemon and lime into the bag, followed by the juice of both
  • Add the garlic, oregano, orange juice and passata
  • Shake up to make sure its mixed well
  • Add in the chicken and hot pepper sauce, again shake up to mix well
  • Seal up the bag and place in the fridge for a couple of hours
  • When ready to eat, pre-heat the oven to 200C / 180C Fan / Gas Mark ?
  • Tip the contents of the bag into an ovenproof dish and bake for about 20 mins or until the chicken is cooked
  • Serve with a side of couscous, the chunky salsa and a wedge of lime
